4 fresh whole sage leaves (or 1/2 tsp. finely crumbled dried leaves)
2 whole chicken breasts, boned, skinned and flattened to 1/4 inch
1/4 lb. thinly sliced prosciutto
3 T. butter
salt & pepper to taste
3 T. dry white wine

Directions:

Divide sage evenly or sprinkle a quarter of the dried sage over each piece of chicken breast. Top each with a slice of prosciutto. Secure together with a toothpick (which will be removed after sauteing). In a saute pan or heavy skillet over medium high heat, melt the butter. Saute the chicken breasts, starting with the prosciutto side down, for 2 to 3 minutes on each side. Do not overcook. Season with salt & pepper while cooking. Remove the chicken pieces to a heated platter, prosciutto side up and keep warm. Add the wine to the pan and bring to a boil, stir well and pour the sauce over the chicken breasts.
