Varied: Marsala Tiramisu Recipe

Ingredients: 2/3 c. plus 1 Tbsp. Sugar 1/2 c. Sweet Marsala Wine 6 large egg yolks (2) 8oz. containers of Mascarpone Cheese (room temperature)
1 c. very strong coffee (hot) 1/4 c. Kahlua Liqueur (2) 7oz. boxes lady finger cookies 2 Tbsp. unsweetened cocoa powder

Directions:Whisk 2/3 cup sugar, Marsala and yolks in medium metal bowl. Set bowl over a saucepan of gently boiling water (don't let bowl touch water). Whisk constantly until candy thermometer reads 165º and mixture thickens, (about 4-5 min). Remove bowl from water . Gradually add Mascarpone, whisking vigorously until well blended.
Combine espresso, Kahlua and remaining 1 Tbsp. sugar in another medium bowl; stir until sugar dissolves. Completely submerge 1 lady finger into espresso mixture for about 1 second; shake off excess liquid. Place it in the bottom of a 8X8 dish. Repeat with enough lady fingers to cover the bottom of the dish. Spoon half of the mascarpone mixture over the soaked lady fingers to cover them. Dip the remaining lady fingers and repeat a second layer. Spoon rest of Mascarpone mixture on top. Discard remaining espresso liquid. Sift cocoa over the mascarpone mixture completely cover and refrigerate several hours (best if left over night). |
