1 qt. milk
1 c. sugar
3T. cornstarch
10 saltine© crackers(broken)
1/2 c. shredded coconut
1 tsp. vanilla
3 egg yolks beaten

Directions:
Directions:
Separate eggs and save whites. In sauce pot heat milk. Combine 1/2 cup sugar and cornstarch, stir into milk. Add crackers, coconut, and vanilla and stir. Slowly add beaten egg yolks and stir. Cook until slightly thickened. Beat egg whites and gradually add 1/2 cup sugar until stiff. Pour pudding into medium casserole dish and spread meringue over top. Bake in 350º oven until brown
