COLD BEET BORSCHT

1 jar or can (16 oz) sliced pickled beets
1 can (13 3/4 oz) beef broth
2 T. leman juice
2 T. granulated sugar
1 T. fresh dill weed or 1 t. dried dill weed
1/4 cup sour cream

Directions:
Directions:

1. Put beets with their liquid in blender or food processor
2. Process with quick on-off turns just until beets are chopped coarse
3. Pour into a medium size bowl or pot
4. Stir in broth, leman juice, sugar and dill.
5. Cover and chill at least 1 hour
6. Stir before serving.
7. Serve, topped with sour cream.
