Creamy tomato sauce with beans but no cream Recipe

Ingredients: garlic Olive Oil (don't be shy) 2 cans of diced tomatoes with basil and oregano 2 cans of Progresso cannellini beans 1 lb ziti bag of baby spinach parsley basil kosher salt fresh ground black pepper pine nuts Parmesan cheese

Directions:In large skillet heat oil, add garlic until lightly browned. Add 2 cans of tomatoes, stir and let simmer. Add 1 can of drained, rinsed cannellini beans into pan and let cook. Put other drained can of cannellini beans into the food processor and puree. Add salt and pepper to this mixture. I give a little dash of olive oil as well. FOLD the creamy mixture into the pan and let cook for 20 minutes on low -med heat. In the last 5 minutes, add the parsley, basil and baby spinach. Cover pan and cook for 5 minutes more. Toast the pine nuts. Prepare ziti. Scoop sauce on pasta and sprinkle pine nuts and Parmesan cheese on top. |

Notes: This recipe is so easy and I made it by mistake one night because I try to put beans into everything. I did not do the exact measurements like most people like because I always wing it. I was the one sitting at the dinner table waiting for the food while my brother and sister learned how to cook. I was only interested in eating it. So here it is. I hope you enjoy it. I love it!
