1 cup brown sugar
1/3 cup plain salt (Non-iodized)
Fresh fish (like trout, salmon, etc)

Mix salt and sugar well. In a glass dish, layer fish with sugar/salt mixture being sure it is covered well. Cover with wax paper and place in refrigerator overnight.

In the morning, DO NOT wash fish, just pat dry with paper towels and place in smoker (It is best to use apple or alder wood chips for smoking fish). Leave in smoker until desired dryness is achieved.

TO CAN IN PRESSURE COOKER

Cut fish to fit snuggly into clean pint jars, leaving about 1/2" from the top of jar. Wipe rim clean and put lid and ring in place. Place jars in pressure cooker for 90 minutes @ 10 pounds of pressure (for over 3000' elevation increase pressure to 12 pounds). Let cool completely prior to removing the lid of the pressure cooker.
