2 Squid steaks or 4 medium sized squid tubes, raw, cleaned
Dried rosemary
Garlic powder
Salt and pepper
Olive oil
1 fresh lemon

Equipment:
8 wooden skewers if using 4 medium size squid tubes
Mortar and pestle

Directions:
Directions:
If using squid tubes, slice down one long side so they open flat. Take a wooden skewer and pierce the squid starting at the bottom right coming through it from the bottom, to the top left piercing it through the top. Do the same with another skewer starting at bottom left to top right. the skewers should make an X through the squid. This is done to hold them flat so they don't curly on the grill.

Whether skewered tubes or steaks, brush olive oil on them- both sides.
Crush about 2 tbsps of rosemary in the mortar and pestle until pieces are around 1/8 inch in length- so small. Sprinkle to rosemary on both sides of the squid.

Sprinkle garlic powder on each side of the squid. Salt and pepper to taste.

Cook on pre-heated medium grill (400 degrees F) one one side for 2 minutes, flip, and cook on the other side for 2 minutes. Remove from grill.

Cut the lemon in half and squeeze to drizzle a bit of fresh lemon juice over the squid.
