2 cups parsnips, peeled and sliced thin
1 clove garlic, minced
˝ teaspoon dried thyme
Fresh ground black pepper to taste

Directions:
Heat olive oil in a skillet over medium heat. Add parsnips and sauté 6 – 8 minutes until tender and lightly golden. Stir in garlic and thyme; cook 1 minute more. Season with black pepper and serve warm.
