Flour
Eggs
Parmesano Reggiano (grated)
Sea Salt
Fresh Ground Pepper
Onion Powder
Garlic Powder
Basil (dried)
Oregano (dried)
Zucchini
Eggplant
Sauce (See Grammy Di Nola's pasta sauce)
shredded Mozzarella
shredded Parmesano Reggiano

Directions:
Directions:
Heat EVOO on low to medium heat. You can smell the EVOO when it is ready for frying. DO NOT burn the olive oil!
Cut eggplant and zucchini into ¼ slices.
Place in flour THEN egg wash.

Egg wash:
2 eggs
grated parmesano reggiano
sea salt
freshly ground pepper
garlic powder
onion powder
basil
oregano

Fry until golden brown on both sides. Pat extra oil off with paper towels.

Coat your pan with a light coating of sauce to prevent burning on the bottom.

Layer:

Eggplant/Zucchini
Sauce
Shredded Mozzarella
Shredded Parmesano Reggiano

Bake at 350º for 45 minutes until cheese is melted.

Use small to medium eggplant and/or zucchini. If the eggplant and zucchini are too large, the seeds make the vegetables bitter.

Make a couple of batches when you cook this - it freezes beautifully!!

This recipe is one of Grammy Di Nola's favorites. When she made this recipe for Di Nola Sunday dinners, she was approached by numerous friends and family to open a restaurant in New York City. She politely declined. I (Debbie) am honored to carry this tradition and fabulous memory forward as my signature and most requested dish!

Although it takes several hours to make. It's always gone in less than five minutes!

This has also become a tradition when the Di Nola/Zimmermann cousins cook together! There may be an urban legend of Lanie Zimmermann Steinwart setting a roll of paper towels on fire during one of these preparations. There may or may not have been wine involved. What happens in the kitchen, stays in the kitchen.

Grammy Di Nola, Uncle Lenny, and Daddy have a sense of humor - whenever we decide to make this dish, something happens with the weather. It can be the best weather forecasted day in the Summer, and it becomes the hottest day of the year! I tried to make this for one of Michael's milestone birthdays (in February) and the power went out in the middle of frying the eggplant!

I know that Grammy, Uncle Lenny, and Daddy are smiling and sending love from heaven every time I cook!
