1 medium onion diced
1 bell pepper seeded and diced
2 stalks celery split and diced
1/4 pound andouille sausage split and sliced
3/4 pound kielbasa sausage split and sliced
2 tbsp olive oil
1 pound red beans soaked overnight
32 oz beef stock
1 tsp minced garlic
1 tsp dried thyme
1 tsp marjoram
1/2 tsp garlic powder
1 tsp + salt
1 tsp black pepper
1/4 tsp gumbo filé powder
2 bay leaves
2 cups cooked rice

Directions:
Directions:
In a large pot heat olive oil over medium high heat
Add sausage and brown over medium high heat. 5-10 min
Remove sausage from pot and save for later
Add diced veggies (trinity) to the pot
Sauté over medium heat until the veggies begin to brown.
Add garlic and brown the garlic for about 1 min
Add beef stock and beans to pot. (Stock should cover beans by about 2 inches)
Add seasonings to pot (thyme, bay leaf, marjoram, filé powder, garlic powder, pepper and salt.
Bring to a boil and reduce heat to a low simmer.
Cook beans until tender (about 2 hours)
Remove bay leaf
Add sausage back into pot.
Smash beans partially to achieve desired thickness
Serve over cooked rice.
Garnish with hot sauce as desired.

Can sub in canned beans to reduce cooking time to 1/2 hour.
Make sure if using dry beans to soak overnight night. Draining water at least once 1/2 through
Can add stock when sautéing veggies 1/2 cup at a time to soften them faster.
If you don’t have Filé powder then don’t worry about it.
Can go all or no andouille sausage depending on spice level you want
You can add up to 1 tsp cayenne pepper to raise heat level if desired.
