"As viscous as motor oil swirled in a swamp, redolent of burnt bell peppers nested in by incontinent mice and a finish reminiscent of the dregs of a stale can of Coca-Cola that someone has been using as an ashtray. Not a bad drink, though."--Excerpt from "The Moose Turd Wine Tasting" by T. A. Nonymous

Directions:
Peel and wash sweet potatoes. Cut potatoes in small round circular pieces. 2. Wash and chop the red apples. 3. Using a large deep casserole dish, begin building layers with the ingredients . Start with the potatoes, apples, pats of butter, 4-5 TBSP. of brown sugar, sprinkle 3 TBSP of cinnamon, and 3-4 TBSP of chopped pecans. Repeat the layers until the casserole dish is full. Cover the casserole dish with aluminum foil. Bake at 350 degrees for 1 hour and 20 minutes . Before serving add the marshmallows to the top and toast under the broiler for about 1 minute. Caution: Watch continuously, they will catch on fire quickly.
Fun Fact: My kids liked to call these sweet potatoes Aunt Pat's Flaming Sweet Potatoes. They said, the casserole was done when the marshmallows burst into flames.
