6 potatoes
1.5 sticks of butter (3/4 cups)
3 cups chicken stock
2 tbsp olive oil
2 sprigs thyme (fresh)
1 sprig rosemary (fresh)
Oven safe sauce pan
1 tsp salt
1/2 tsp black pepper

Directions:
Directions:
Preheat oven to 375
Cut potatoes into even thickness (approximately 1” thick slice)
Peel sides of potatoes
In a hot pan add olive oil to coat bottom.
Place potatoes presentation side down.
Cook until edges begin to brown. About 5 min
Turn over and cook opposite side until brown.
Flip over again so presentation side is down.
Add butter, thyme, rosemary and 1 cup chicken stock to pan.
Place in preheated oven and bake for 10-15 min or until potatoes start to brown. Basting occasionally
Remove from oven and remove potatoes from pan.
Sieve butter sauce into a bowl.
Add sieved sauce to pan.
Add 1-2 cups of chicken stock and bring to a simmer.
Add potatoes back to pan and let sauce reduce until it coats the back of a spoon.
Serve potatoes hot and add sauce as desired.
