4-1/2 pounds of pears, peeled, cored, and chopped
1 cup of crystallized ginger, chopped
7 cups of sugar
1 tbsp butter
1/4 cup of lemon juice
1 package of liquid pectin

Directions:
Directions:
Peel, core and chop the pears and ginger.

Add to a big pot. Add the lemon juice and sugar and melt and simmer. Simmer until the pears are soft, around 15 minutes. I used a stick blender to get to the consistency I wanted. Still leaving chunks. Continue to simmer for 20 minutes. Add butter to reduce the foam. Take off the heat, and add the pectin stirring. Stir and cool for 10 minutes.

Spoon into jars and can for 20 minutes.
