8 quarts sliced apples
5 ½ cups sugar
1 ½ cups clear jel (not corn starch) I found cook type clear jel on line.
1 Tbsp. cinnamon
1 tsp. nutmeg
2 ½ cups cold water
5 cups apple juice
¾ cup bottled lemon juice

1 can of sprite to keep apples from turning brown.

Peel, core and slice apples. Pour a little sprite over them to help keep them from browning as you are peeling and slicing. In a large kettle bring water to a boil and add apples, return to a boil and cook for 1 minute. Drain apples and keep in a covered container to keep them warm.
Combine 5 ½ cups sugar, 1 ½ cups clear jel, 1 Tbsp. cinnamon, 1 tsp. nutmeg, 5 cups apple juice, 2 ½ cups COLD water in a large stock pot. Cook over medium heat until it begins to thicken and bubble. Add ¾ cup lemon juice and boil for 1 minute stirring constantly. Fold in drained apples. Immediately fill clean jars. Clean tops and place hot lids on jars. Tighten rings and put in a boiling hot water bath for 25 minutes.
