1 lb sirlion tip steak or beef top round
2 cloves garlic, mashed
2 Tbsp sofrito
1 1/2 tsp orange juice
1 1/2 tsp lime juice
1 tsp adobo
1/2 tsp oregano
1/4 tsp salt
1 tsp olive oil
1/2 tsp sugar
2 cups water
1/2 yellow onion, sliced
1 Tbsp tomato paste

Directions:
Directions:
Combine garlic, sofrito, orange juice, lime juice, adobo, oregano, and salt.
Add the beef and coat well.
Heat the oil in a pot over medium heat and sprinkle evenly with the sugar.
As soon as the sugar has melted and beginning to brown, add the beef.
Cook about 5 minutes, until the beef has absorbed most of the juices.
Turn the beef, then 1/2 cup water cook until the juices have been absorbed, 5 - 8 minutes.
Turn the beef again, add an additonal 1/2 cup water, and cook for 5 minutes.
Add the onion slices and cook 2 - 3 minutes, until slightly charred.
Stir in tomato paste and 1 cup water, then cover and cook for until the liquid is reduced by half.
