4 large eggs
2 egg yolks
1 pound spaghetti
8 ounces pancetta
3 tbs tomato paste
12 ounces cherry tomatoes
1.5 ounces parmesan cheese
1/2 tsp kosher salt
1/2 tsp fresh ground pepper

Directions:
Directions:
Cook spaghetti in salted boiling water, reserving 1 cup pasta water.

Cook pancetta until crisp, then stir in tomato paste, until color is deep red and sticking to pan.

Stir in cherry tomatoes and 1/4 cup pasta water, until tomatoes are softened.

Transfer spaghetti to pan, toss to coat well.

Whisk eggs well and then whisk in cheese, salt and pepper. Slowly stream in 2 tsp pasta water, stirring constantly, until well combined.

While tossing pasta with tongs, slowly pour in egg mixture over the noodles. Add 1/4 cup pasta water, return to heat and continue to cook until sauce thickens.

Check for salt and pepper.
