2 boneless, skinless, chicken breasts, sliced in half
1.5 cups of grape tomatoes, sliced in half
˝ large, yellow onion, diced
4 cloves garlic, minced
handful of fresh basil, chopped
1 TBSP butter +
˝ tsp of chicken Better than Bouillion
Goat cheese crumble for topping
Scallions for topping
salt and pepper to taste
Balsamic vinegar

Directions:
Directions:
Step 1—Slice the chicken breasts in half then season generously with salt and pepper.

Step 2—Over medium-high heat in a large skillet, add 1-2 TBSP of olive oil. Once the oil is hot, sear the chicken on both sides until it is nice and brown. (about 4 minutes each side).

Step 3—Remove the mostly cooked through chicken and set on a plate, covered with aluminum foil. In the same skillet, add the onion, and garlic and cook until soft and fragrant. Turn the heat off for 2 minutes then add in the tomatoes. Allow the tomatoes to soften and the juices to burst, then add the basil and the chicken Better than Bouillion.

Step 4—Add the chicken back into the skillet and let it warm back up with the sauce. Spooning the sauce over the chicken and add butter.

Step 5—Plate and top with goat cheese crumble and scallions. Drizzle with balsamic vinegar and enjoy.

I prepare this early for when Steven is working late up through Step 3. Proceeding to Step 4 when he is almost home. The goat cheese adds a nice bite. Delicious and quick.
