1 pound of Soba noodles
1/2 cup soy sauce
4 TBSP rice vinegar
2 TBSP toasted sesame oil
2 TBSP peanut butter
4 TBSP vegetable oil
2 TBSP honey
2 TBSP grated ginger
1 tsp crushed red pepper flakes
1 cup of chopped scallions
1 cup of julienned english cucumber
Optional topping: sesame seeds, chopped peanuts, shredded carrots

Step 1—Cook the soba noodles to al dente in boiling water. Drain and rinse under very cold water to stop the cooking.

Step 2—Make the sesame dressing. In a medium bowl, whisk together the soy sauce, rice vinegar, sesame oil, peanut butter, vegetable oil, honey, garlic, ginger, and red pepper flakes until smooth and emulsified.

Step 3—Toss the noodles with the dressing. Tossing well to coat evenly.

Step 4—Stir in the chopped scallions and cucumbers. Mix until well distributed.

Step 5—Chill for several hours. 12 hours is best. Stores well in the refrigerator for 3-4 days.

Steven adds more "heat" to his serving bowls. It is not too spicy for me. This is a great side dish for the summer. You can add protein like chicken to make it a meal.
