2 sticks butter, room temperature
5 cups powdered sugar, sifted
¼ cup cocoa
¼ tsp. salt
½ to ¾ cup brewed and cooled coffee

Cream butter with sugar, cocoa, and salt. Add coffee as needed to get the spreading consistency you need.

This recipe is from Ree Drummond, the Pioneer Woman on the Food Network. I watched her make this for the ranch hands lunch dessert one day and she put all this on a 13 x 9" pan of brownies! That frosting was at least an inch thick! Maybe thicker then the brownie! I decided I wouldn't be "working it off" like the ranch hands, so when I made it I cut it in half for a pan of brownies. It is quite delicious and still more than enough frosting in my opinion. But unless you don't like a mocha flavor, I'd highly recommend this recipe. The full batch would certainly be plenty for a 2 or even 3 layer cake too.
