1 lb bow tie pasta
3 spring onions
1¾ oz sun-dried tomatoes, cut into strips
2 lb English spinach, stalks trimmed and leaves shredded
⅓ c toasted sliced almonds
1 T chopped fresh oregano
¼ c olive oil
¼ c fresh chopped chili
1 clove garlic, crushed
Salt and pepper to taste

Cook the pasta until al denta. Drain, rinse under cold water and drain again. Allow to cool and transfer to a large salad bowl. Trim the spring onions and finely slice diagonally. Add to the pasta with the tomatoes, spinach, almonds, and oregano.

To make dressing, combine the oil, chili, garlic and salt and pepper (to taste) in a small jar and shake well. Pour the dressing over the top of the salad. Toss and serve.
