Ingredients: 1 large round sesame loaf (or focaccia, sliced horizontally) ½ cup green olives, chopped ½ cup black olives, chopped ¼ cup roasted red peppers, chopped ¼ cup pickled banana peppers, sliced 2 tablespoons capers, drained ¼ cup olive oil 1 teaspoon dried oregano 1 teaspoon red wine vinegar 4 slices provolone cheese 4 slices mozzarella cheese 6 slices smoked turkey or roast chicken 6 slices beef salami or turkey pastrami 4 slices beef mortadella (or additional turkey/roast chicken) Fresh chopped parsley, for garnish (optional)

Directions:1. In a bowl, combine chopped olives, red peppers, banana peppers, capers, olive oil, oregano, and vinegar. Stir well to make the olive salad.
2. Slice the bread horizontally and hollow out a bit of the soft interior to make room for fillings.
3. Spread half of the olive salad on the bottom half of the bread.
4. Layer provolone, mozzarella, turkey/roast chicken, beef salami, and mortadella evenly.
5. Top with the remaining olive salad, then the top half of the bread.
6. Press the sandwich gently and wrap tightly in plastic wrap.
7. Refrigerate for at least 1 hour (or overnight) to let flavors meld.
8. Slice into wedges and garnish with chopped parsley if desired. Serve chilled or at room temperature.
