2 T. olive oil
6 T. butter, divided 2 T. and 4 T.
4 chicken breasts
1 tsp. Kosher salt
½ tsp. black pepper
4 cloves garlic, minced
¼ cup green onions (or parsley)
¼ cup Parmesan cheese, finely grated
1 lemon, cut into wedges

Directions:

1—Heat the oil and 2 T. of butter in a large skillet pan over medium-high heat. Pat the chicken breasts dry and season with half the salt and pepper. Add the chicken to the skillet and cook until golden brown, about three minutes per side. Temperature of the chicken should be about 165º in the thickest part. Remove the chicken from the skillet and transfer to a plate: set aside.

2—Turn off the heat on the skillet and add the remaining butter, stirring until melted, do not burn the butter. Add the garlic and cook until fragrant, about 1 minute.

3—Turn the heat in the skillet back to medium-high and transfer the chicken and all the juices from the plate back to the skillet with the melted butter. Add half of the green onions (or parsley) and stir to coat the chicken; season to taste with salt and pepper.

4—Serve, top each plate with Parmesan cheese and remaining green onions. Provide lemon wedges on the side for squeezing over chicken. Serve with side dishes of choice.
