Ingredients:

3 chicken breasts, cut into cubes and sautéed till tender
32 oz. chicken broth
2 cans Cannelloni beans
1 lg. sweet onion diced coarsely
1 cup salsa verdi
1 tsp. chili powder
1 Tbsp. cumin
1 tsp. garlic powder OR 1 clove fresh garlic, minced
1/2 tsp. oregano
1 tsp. white pepper
1 tsp. salt

Optional ingredients
2 ears sweet corn, cut off cob OR 1 cup Frozen whole kernel corn
1 brick cream cheese
1 small can chopped green chili peppers

Directions:
Directions:
Place everything into Crock Pot. Cover and cook on high for 4 hours.

If you like chili thicker, thicken with a cornstarch slurry (2 Tbsp. corn starch, 1/4 c water)

Serve with Cornbread, Fritos chips, tortillas chips, crackers or crusty bread. Garnish with grated extra sharp cheddar cheese, sour cream and or chopped sweet onions.

This a mild chicken chili feel free to add more red pepper to make it as hot and spicy as you like. My daughter (Becky) and I prefer it mild. This is Becky's recipe minus the optional ingredients
