1/4 cup (4 tablespoons) salted butter


1 large yellow onion, sliced thin


2 cloves garlic, minced


1 teaspoon red pepper flakes


1/4 cup all-purpose flour


1 cup milk


6 ounces light beer


2 heaping tablespoons grainy mustard


1 cup grated Cheddar


1/2 cup grated fontina cheese


1/2 cup grated mozzarella

Directions:
Directions:
Add the butter to a large saucepan or high-sided skillet over a medium heat.

When the butter has melted, add the onions, garlic and red pepper flakes, then cook until the onions are golden, 8 to 10 minutes.

Sprinkle over the flour and stir to combine. Slowly pour in the milk and beer a little at a time, whisking until smooth after each addition. Add the mustard and cheeses and stir until smooth.

Serve with pretzel rods, carrots and celery.
