Bowl of hard rolls or bread, sliced - let sit out 2 days to get stale
1-1/2 c. heated milk
2 eggs
1/2 c. parsley chopped
1 large onion, chopped
Salt
Butter

Directions:
Directions:
Slice bread and let it sit out for 2-3 days.
Pour milk over bread and let it soak in until soft.
Sauté onions & parsley. Mix with the bread.
Add eggs and flour. Roll into balls the size of a baseball - using wet hands.

In a large saucepan, bring salted water to a boil.

To test to see if the dumplings will hold together - do a trial run.
Add dumpling to the water to cook. If it stays together, you can go ahead and boil remaining dumplings you make in the large saucepan. If it's too soft - add flour.

Bring to a rolling boil and simmer 25 minutes. Serve with anything having gravy.
