2 Yukon Gold Potatoes
2 carrots
2 parsnips
1 onion
1/2 acorn squash
2 cups vegetable broth
1 tsp dried sage
1/2 tsp salt
1/2 tsp pepper
2 Tbsp butter

Directions:
Directions:
Peel potatoes, carrots, parsnips, onion and squash. Cut potatoes and squash into 1 inch cubes. Cut carrots and parsnips into 1/4 inch thick slices. Cut onion into 6 wedges, keeping root end intact. Place vegetables into slow cooker; stir in broth, sage, salt and pepper.
Cover and cook on low until vegetables are tender and some liquid remains, 4 - 6 hours.
Add butter and gently toss to coat.
