Ingredients: 1 Chicken Breast Salt and Pepper to taste 6 strips Bacon, chopped 1 tbs Olive Oil 1 cup Mushrooms, sliced thin 2 cloves Garlic, pressed 1/2 cup Onions chopped fine 1 cup Cream, heavy 1/2 cup Chicken Broth 1/2 cup Parmesan Cheese, grated 2 cups Spinach, leaves 1 tsp Italian Seasoning Mix 1-8 ozs can Green Beans 1-8 ozs can Corn 1 cup Potatoes, chopped fine

Directions:In a frying pan combine the the chickn with salt and pepper, add olive oil and sear th the chicken for about 5-6 minutes per side until golden brown and cooked through, set aside. In the same skillet, saute' the mushrooms for 3-4 minutes until fork tender. Add garlic and onions and sauté until the onions are clear and garlic is brown and flagrant. Stir in the chicken broth and cream, scraping up the browned bits from the bottom c of the frying pan. Combine the cheese and Italian seasoning stirring until the sauce thickens. Add in the spinach and cook until wilted. Return the bacon to the skillet. Add the seared chicken back to the skillet, coating it with the creamy sauce. Let everything simmer for 2-3 hours until the vegetables are fork Serve and ENJOY! |
