1 Deep dish pie crust
1 T butter
1/2 cup thin shallots
4 eggs
1-1/4 cup heavy cream
pinch nutmeg
3/4 tsp salt
1 cup finely shred Gruyere cheese packed
10 oz frozen chopped spinach - drain
pinch cayenne pepper

Directions:
Directions:
Bake crust for 10 minutes at 400º
Heat butter in skillet - cook shallots until soft (8 minutes)
In medium bowl whisk eggs, cream, nutmeg, cayenne pepper and salt
Spread shallots over bottom of crust
Sprinkle cheese
Scatter spinach over cheese
Pour egg & cream mixture on top

Bake 325º for 50-55 minutes until custard is set and top lightly golden.
Serve hot or warm.

Can make the day ahead.

To freeze: cover with aluminum foil and bake 35-45 minutes at 300º.
Freeze partially cooked. Thaw 24 hours. Cover with foil and bake 300º until hot.
