1¼ c flour
1½ tsp baking powder
½ tsp salt
⅔ c white sugar
1 c chopped fresh or canned peaches, divided ¾ and ¼
½ c milk
1 egg
¼ c vegetable oil
1 tsp vanilla extract
Streusel Topping:
¼ c flour
3 tbsp white sugar
½ tsp cinnamon
4 tbsp cold unsalted butter

Preheat oven to 350º
1. Mix dry ingredients in a large bowl
2. Add ¾ c of peaches. coating them with the flour mixture. To keep them from sinking it the batter.
3. Mix milk, egg, oil, and vanilla extract until smooth.
4. add the wet ingredients to the dry ingredients. Gently folding the mixture until combined. Fill each muffin cup about ¾ full with batter.
5. Prepare streusel for the topping. Mix dry ingredients and cut in the cold butter until the mixture resembles coarse crumbs.
6.Evenly distributed the remaining ¼ c of peaches then sprinkle with the streusel topping.
7. Bake for 20 min. or until a toothpick inserted comes out clean.
