3 Eggs
2 cups Sugar
1 cup Oil
1 tsp Vanilla
3 cups Plain Flour
1-1/4 tsp Salt
1 tsp Baking Soda
1/4 tsp Baking Powder
1/4 tsp Cinnamon
2 cups peeled, shredded Zucchini
1 cup Pecans or Walnuts (optional)

Directions:
Directions:
Beat eggs. Add oil, sugar, vanilla, salt, baking soda, cinnamon and baking powder. Then add zucchini and flour. Mix well.
Bake in 2 greased and floured loaf pans or may use a 9x13 pan.
Bake at 325 degreesē for one hour.
