4 ancho chilies
6 Hatch chilies
1 large onion, quartered
4 large tomatoes, halved
8 cloves garlic
4 c. beef broth
1 t. oil
3 lbs. beef chuck, cut into 1 1/2" pieces
1/2 t. salt
1/4 c. apple cider vinegar
1 T. cumin
1 T. coriander
2 bay leaves

Directions:

Preheat oven to 300 degrees.
Combine chilies, onion, garlic, tomatoes, and broth into large pot. Place over medium heat and bring to a simmer. Simmer 15 minutes.

While simmering, sear beef in oil in large Dutch oven. Season with salt and pepper and brown for 5 minutes till brown.

Use immersion blender to puree the chili and broth mixture until smooth.

Add liquid mixture into Dutch oven along with vinegar, cumin, coriander, and bay leaves. Bring to simmer. Put in oven and cook for 3 hours.
