5 lbs Russet potatoes
8 (oz) cream cheese, softened
1 1/2 sticks butter
2 tsp salt 1 tsp pepper
1 - 1½ C warm half and half
2 cloves roasted garlic, optional
1 C grated sharp Cheddar cheese, optional
chives and crisp bacon for garnish

Peel potatoes and cook until soft. Drain well. Mash the potatoes with a potato masher or use wire whisk. Add 1 stick of butter and mix well. The add cream cheese and half and half until the consistency is how you like it. If adding garlic, add it now. Put in a buttered 9x13 baking dish and spread potato mixture into dish. Let cool. Add the rest of butter in pats over potatoes. Cover well and refrigerate until you are ready to bake. I usually put saran wrap and the cover with foil. Can do 3 days in advanced.

TO BAKE: Remove from refrigerator and let sit for at least 30 minutes. Preheat the oven to 350 degrees and bake for 30 minutes or until they are warmed in the middle. If using cheese, spread the Cheddar Cheese on top and return to oven to melt. Garnish with chives and crisp bacon pieces.
