6 large yellow onions
2-4 T olive oil/butter
1/2 tsp salt
1 tsp sugar
balsamic vinegar

DO NOT use a Teflon pan to caramelize these onions because as they cook, you will need to scrape the bits that are in bottom of the pan. Peel the onions. Cut the onions in thin quarters to desired thickness. Coat the bottom of a heavy pan with olive oil/butter. Heat the pan on medium high heat until the oil is medium hot. Add the onion slices and stir to coat the onions with the oil. Spread the onions out evenly over the pan and let cook, stirring occasionally. Reduce the heat to prevent the onions from burning or drying out. After 10 minutes, sprinkle on salt and sugar to help with the caramelization process and to bring out the juice of the onions. You may need to add a little water to the pan if they start drying out. Let cook for at least 30 minutes, stirring every 10 minutes and scrape the bottom of the pan until the onions are a rich, brown color. At the end of the cooking process, add a little balsamic vinegar or wine to help deglaze the pan and bring some additional flavor to the onions.

These are so good to put on a grilled hamburger or steak.

Use yellow, white or red onions. Onions cook way down so when you are planning on serving, allow for shrinkage.
