36 cupcakes
2 1/2c flour
1 1/2 c sugar
1/4t &1/8 t soda
1 1/2 t baking powder
1 1/8 c butter, soft
3 eggs
3 t. vanilla
3/4 c sour cream
1/2 c milk
1 1/8 c strawberries, chopped

Preheat oven to 350 degrees. Whisk together flour, sugar, soda, and baking powder. Add soft butter, eggs, vanilla, sour cream, and milk. Beat until smooth, don’t over mix. Fold in chopped strawberries. Bake for 18-20 minutes. Cool 2-3 minutes before removing to cooling rack.

PUREE: Use blender to puree the berries(3/4 c). Put in sauce pan with sugar. Cook down till thickens (1 1/2 T)

STRAWBERRY CREAM CHEESE FROSTING
1/2 c butter, soft
8 oz cr. cheese, soft
3 1/2 c pwd sugar
1/2 t. vanilla
2 1/4 T puree

Beat together butter and soft cream cheese for 30 seconds, add pinch of salt. Add powder sugar and beat until light and fluffy 3-5 minutes.Beat in strawberry puree and vanilla, if not pink enough add coloring. Pipe on frosting. If not thick enough, refrigerate for 15 minutes first before frosting cupcakes.
