1 lb fresh or dried sorrel
3 cloves
½ oz green ginger - peeled and grated (or 2 tsp ground ginger)
A few grains of ??? for fermenting
3 pints of boiling water
1½ lbs sugar
Rum to flavour (optional)

Directions:
Directions:
Place all the ingredients in a large saucepan and pour boiling water over it. Cover and allow to stand for 2 days.

Strain and serve warm or chilled.

This is a West Indian Christmas drink, thick and usually served with lots of rum. It was a recipe I got when I worked in Brixton in the 1970's as part of Lambeth's Consumer Action Team.
