1 stick butter (softened)
1/2 tsp. monkfruit powder
1 tsp. vanilla extract
1/2 tsp. salt
2 c. almond flour
2/3 c. keto friendly dark choc chips (use a full 9 oz. package if doing a double recipe)

Directions:
Directions:
Beat butter until light and fluffy
Add sugar, vanilla, & salt & beat until combined
Slowly beat in almond flour until no dry spots remain
Fold in choc chips
Cover and refrigerate 15-20 mins
Make small balls
Eat in one week or freeze up to 1 month

Another sugar alternative is 1/4 c. swerve confectioners
When my husband and I tried the keto diet we tried several sugar alternatives, there is a monkfruit powder on amazon and it's VERY potent, but it worked well for this recipe
