2T. Butter
1 Shallot, minced
4 Cloves Garlic, minced
24oz Gnocchi (dry, not fresh) - doesn't need to be exactly 24oz.
1/2c. Sundried Tomatoes, thinly sliced
2t. Oil from jar of Sundried Tomatoes
1/2c. Chicken Broth (or any kind of broth)
1c. Heavy Cream
1t. Dried Italian Herbs
2c. Spinach
1/2c. Freshly Grated Parmesan
Salt and Pepper

Directions:
Directions:
Heat large skillet or medium heat. Add butter and saute shallots until translucent.

Add garlic and cook additional minute or so.

Add gnocchi and cook for 1-2 minutes

Add tomatoes and cook 2-3 minutes

Pour in broth, cream and herbs. Add oil from jar of sundried tomatoes.

Reduce heat to medium-low and cook 5 minutes.

Add spinach and cook til wilted

Stir in parmesan and cook to desired thickness.

Salt and pepper to taste
