Sauce:
1/2 cup raw cashews
1/2 cup nutritional yeast
2 tablespoons white wine vinegar
1.5 cups water


3 cloves garlic, minced
2 14.5-ounce cannellini beans, drained and rinsed
1/4 cup sundried tomatoes, sliced into thin strips
1 cup cherry tomatoes, sliced in half
1 10-ounce bag frozen chopped greens (kale, spinach, etc.)
2 tablespoons tomato paste
2 tablespoons smoked paprika
1 tablespoon oregano
1 tablespoon thyme
1 teaspoon red pepper flakes

Directions:

Add all the Sauce Ingredients to a small blender and blend until smooth.

Sauté the garlic for 30 seconds and then add the remaining ingredients along with the blended sauce to a Dutch Oven or pot and simmer for about 15 minutes until the sauce is thick and creamy.

I first made this March 2025, the kids liked it. I did drizzle a very tiny amount of salt and garlic-infused olive oil over their portion to give them some healthy fat.
