Preheat oven to 400.
Place chicken breast on a cooking sheet with avocado oil on it.
Bake chicken breast and thigh meat with lemon pepper seasoning on both sides of the chicken. Bake for 20 to 30 minutes.
Let it come to room temperature, then dice it into small pieces.

in a small bowl add.:
3 Tbsp Hoisin sauce
2 Tbsp soy sauce
2 Tbsp rice wine vinegar
1 tsp sesame oil
1 Tbsp extra-virgin olive oil
1 medium onion, diced
2 cloves garlic minced
1 Tbsp freshly grated ginger
1/2 cup canned water chestnuts, chopped
2 green onions, thinly sliced
Kosher salt
Pepper to taste
Large leafy lettuce (leaves separated).
1 cup cilantro lime rice (recipe below).

Directions:
Make the sauce: in a small bowl, whisk together hoisin sauce, soy sauce, rice wine vinegar, and sesame oil.
In a large skillet over medium-high heat, heat olive oil. Add onions and cook until soft, 5 minutes, then stir in garlic and ginger and cook until fragrant, 1 minute more. Add ground chicken and cook until opaque and mostly cooked through, breaking up meaty with a wooden spoon.

Pour in the sauce and cook 1 to 2 minutes more, until sauce reduces slightly. Turn off the heat and stir in chestnuts and green onions. Season with salt and pepper.

Stir in rice and mix well.

Place the chicken mixture in the center of the lettuce leaf and roll it up like a burrito.

Serve Immediately.

Cilantro Lime Rice:
Cook parboiled rice according to directions. Add 1/3 cup fresh lime juice, and salt to taste.
Add chopped cilantro about 1/4 cup.
Add more lime juice according to your taste.
1/4 cup of butter.
