2- 5 gal. pails of whole tomatoes
Clean tomatoes, prep them by cutting off the ends. Cook them in a large pot. Using a tomato sieve, mash them to get the juice and pulp.
Cook together, 1 head of chopped celery and 1 chopped onion. Divide this into two large kettles along with half the juice. To each kettle of juice, add 3-4 cups of sugar and 1 tsp. salt. Bring to a boil.
Put into quart jars. Process in a hot water bath for 15 minutes.
