1 1/4 Cup Warm whole milk
3 Tbl Granulated sugar
1 Tbl Active dry yeast
4 3/4 Cup bread flour, plus more for surface
10 Tbl Melted unsalted butter, cooled
3 Large eggs
3 oz Parmesan cheese (about 1 cup), plus more for sprinkling
1 Tbl Minced fresh rosemary
2 tsp Table salt
1/4 tsp Black pepper

1. Preheat ove to 350º

2. Whisk milk, sugar and yeast in small bowl until combined
3. Let sit until foamy. About 5 minutes
4. Place flour in bowl of stand mixer with dough hook attachment
5. Add milk mixture, melted butter and 2 of the eggs
6. Beat at low speed until combined, about 1 minute
7. Increase speed to medium until dough comes together in a mass, about 3-5 minutes
8. Let dough rest about 15 minutes
9. Add Parmesan, rosemary, salt and pepper to the dough
10. Beat on medium low until combined. About 1 minute
11. Increase speed to medium and mix until dough is smooth and pulls mostly away from the bowl, 3-5 minutes
12. Transfer dough into sprayed large bowl and cover with plastic wrap
13. Let rise at room temperature until doubled, about 1 hour
14. Spray 13x9" baking pan
15. Turn dough out onto a lightly floured surface
16. Divide dough into 24 equal golf ball size pieces (about 1 3/4 oz each)
17. Roll each piece on counter until smooth, tight ball
18. Place in pan and cover with plastic
19. Let rise at room temperature until almost doubled, about 1-1 1/2 hours
20. Lightly beat remaining egg in a small bowl
21. Brush tops of rolls with beaten egg
22. Sprinkle top of rolls with remaining Parmesan

23. Bake, rotating pan halfway through until 205º-210º, about 25 minutes
24. Transfer to wire rack and cool for 30 minutes
