Preheat to 350º; grease 2qt dish.
5 slices cooked, chopped bacon for topping

On med/hi heat in drippings, cook:
1 lg onion, chopped
3 stalks celery, chopped
1 sm bell pepper, chopped

Stir in
1 c uncooked long-grain rice
1 16oz can chopped tomatoes, undrained
¾ c chicken broth
½ t each, salt & pepper & cayenne
¼ tsp hot pepper sauce

To avoid nightshades:
exchange onion, garlic, pepper, tomato
for zucchini, parship, ylw squash, carrot, broccoli

Spoon into dish, bake covered w/foil 40-45 min.
Do not stir during cooking.
