6 Strips Bacon - chopped to 1/2-inch pieces
2 lbs. Pork Chops
2 Tsp Cajun Seasoning
1 Tsp Garlic - minced
1 Tsp Dried Thyme
3 Tbsp Butter
2 Tbsp Sundried Tomatoes - chopped, drained
3 Tbsp All Purpose Flour
1 Cup Chicken Broth
1/2 Cup Heavy Cream

1. In a large skillet, cook bacon over medium heat until cooked. Remove to paper towel lined plate.
2. Season Pork Chops with Cajun seasoning. Increase heat to medium high and sear pork chops for 5 minutes on each side. Remove pork chops to a plate and cover with foil.
3. To skillet, add garlic, butter and sundried tomatoes. Reduce heat to medium and cook until garlic is tender. Sprinkle with thyme and flour and stir until absorbed.
4. Add chicken broth and raise heat to medium-high to bring mixture to a boil, constantly stirring. Reduce heat to medium and add heavy cream and stir well for 1-2 minutes until mixture thickens.
5. Return bacon and pork chops to skillet. Simmer on low heat, covered, until pork chops are cooked through. About 3 minutes per side.
