3 cups water
3 skinless, boneless chicken breasts
1 bag shoe peg corn
3 cans Northern beans
1 tbsp. ground cumin seed
3 tbsp. lime juice
1 - 7 oz. can diced chilies
1 medium onion, chopped
1 tsp. oil
2 tbsp. lemon pepper
1 tsp. minced garlic

Directions:
Directions:
Place chicken breasts in large heavy pot with 3 cups water, add cumin and lemon pepper. Cover. Bring to a boil and cook gently about 20 minutes or until tender.

Sauté onion and garlic in 1 teaspoon oil. Remove chicken breasts from water. Cool. Dice into bite size pieces. Skim fat from water and return chicken to pot, along with remaining ingredients. Simmer to preferred consistency.

Adjust seasonings (cumin, lemon pepper, salt, and chili powder) to taste. Serve with sour cream, Colby Jack cheese, tortilla chips or corn bread muffins and chopped onions.
