Zucchini Pizza Casserole

4 Cups finely chopped zucchini- unpeeled
1 teaspoon salt
2 eggs
1/2 cup grated Parmesan cheese
8 oz. Shredded Cheddar Cheese - divided in half
8 oz. Shredded Mozzarella cheese - divided in half
1 lb. lean ground beef
1/2 cup chopped onion
1 14-oz. jar pizza sauce or 2 8-oz. tomato sauce
1/2 teaspoon oregano
1/2 teaspoon basil
1/4 teaspoon garlic powder
Dash black pepper
1 medium green bell pepper, chopped
1 small can mushrooms, drained
1/2 cup diced black olives
1/2 cup diced green olives

Preheat oven to 400 degrees

Place zucchini in colander and sprinkle with salt. Stir and let drain for 10 minutes. Squeeze out moisture. Combine zucchini with eggs, Parmesan cheese and half of the cheddar & mozzarella cheeses. Press into greased 13x9” baking dish. Bake at 400 degrees for 20 minutes.
Meanwhile cook ground beef and onions. Drain off grease. Add pizza sauce, oregano, basil, garlic powder, black pepper, green pepper & mushrooms. Spoon over zucchini mixture. Top with remaining cheeses & olives. Sprinkle with additional grated cheese if desired.
Bake 20 minutes longer.

This dish may be modified with various toppings to suit your taste just as you would with pizza. Pepperoni would be good on this casserole.
