3.5-4 pounds boneless chuck roast
1/2 cup beef broth
2 tbsp tomato paste
1 lime, juiced
Dry Rub Spices:
2 tbsp chili powder
1/2 tbsp onion powder
1-2 tsp salt
2 tsp cumin
2 tsp garlic powder
1 tsp black pepper
1/2 tsp cayenne pepper
1/2 tsp paprika

Directions:
Directions:
Combine all the dry ingredients in a small bowl, set aside
In another bowl, whisk together the beef broth and tomato paste
Place the roast in the slow cooker
Rub 1/2 of the dry spice mix on the top of the roast, flip it over and rub the remaining spices on the other side
Pour the broth/tomato paste mixture over the top and sides of the roast
Cover and cook for 8 hours
Remove the roast and place on a plate
Shred the roast with a fork(s), discarding any excess fat
Return the shredded beef to the slow cooker, squeeze in lime juice, and stir
