Gnocchi:

2 pounds (about 4 large) russet potatoes
1 to 1.5 cups all-purpose flour, plus extra for dusting
1 large egg, lightly beaten
1 teaspoon Salt
-1 cup Parmigiano cheese

Sauce (Simple Tomato Sauce):

2 tablespoons olive oil
2 cloves garlic, minced
1 can (28 ounces) crushed tomatoes
Salt and pepper to taste
- Fresh basil leaves, torn (optional)

For the Gnocchi:

1. Prepare the potatoes: Boil the potatoes in their skins until tender, about 40 minutes. Drain and allow to cool slightly.
Peel the potatoes and pass them through a potato ricer onto a clean work surface.
2. Make the dough: Create a well in the center of the riced potatoes.Add a generous pinch of salt to the dish.Pour the beaten egg into the well and add the parmigiano.
Gradually add flour, starting with 1 cup, and begin gently mixing with your hands until a dough forms. Add more flour as needed until the dough is soft but not sticky.
3. Shape the Gnocchi: Divide the dough into 4 pieces. Roll each piece into a long rope, about 3/4 inch in diameter.Cut ropes into 1-inch pieces.Optional: Roll each piece over the back of a fork to create ridges.
4. Cook the Gnocchi: Bring a large pot of salted water to a boil. Carefully add the gnocchi in batches.
Cook until they float to the surface, about 2 to 3 minutes.
Remove with a slotted spoon and transfer to a plate.

For the Sauce:
1. Prepare the sauce: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.Stir in the crushed tomatoes and season with salt and pepper.Let simmer for about 20 minutes, stirring occasionally.
2. Combine: Add the cooked gnocchi to the sauce.Gently toss to coat them evenly.If desired, add fresh basil before serving.

Serve the gnocchi hot, garnished with grated Parmesan cheese and additional basil if you like. Enjoy this comforting Italian dish with a side salad or crusty bread for a complete meal.
