1 lb. chicken breaks
1/2 red onion finely chopped
1 fresh lemon
10 purple or green olives
2 garlic cloves finely chopped
1 T parsley finely shopped
1 t cilantro finely chopped
2 T olive oil
1 t butter
water

1/2 t pepper
1 t ginger powder
1 t turmeric powder
a good pinch of saffron threads

Directions:

The chicken breasts should not be too thick. You may cut them into 3/4 " thick Supremes and make knife cuts on the surface.

Add olive oil and butter to Tajine, the juice of the lemon and it's zest, garlic, parsley, cilantro, all the spices and a cup of cold water mix well. Add Chicken pieces coating them with the sauce. Add finely chopped onion. On low heat Cook for 15 minutes with the tajine lid on to keep the moisture in. Add more water if necessary and cook until chicken is done (15 minutes or more) the sauce should thicken slightly.

This recipe is from La Maison Arabe Marrakech by Cenizaro. We took a cooking class there when we visited Morocco in 2024. These 2 ladies were amazing teachers and we learned so much about Morocco and cooking in 2 short hours.
