2-3 large sweet potatoes
½ c raw cane sugar
3-4 T flour (as needed in case potatoes are over cooked and too soft)
2 eggs, lightly beaten
¾ stick butter
1 T vanilla
½ t cardamom
½ c shredded sweetened coconut

Topping
1 c brown sugar
⅓ c flour
⅓ c melted butter
1 c crushed pecans

Preheat oven to 400º
Wash sweet potatoes and then poke them a few times with a fork. Place on a baking sheet and bake until sof5, about 40 min. Allow them to cool slightly so you can touch them. Peel, then mash the potatoes in a mixing bowl. Set oven to 350º. Add the remaining ingredients to the bowl and mix to incorporate. (If mixture is too mushy/runny, add another T of flour. Add the filling to a baking dish. In a separate bowl, add the topping ingredients and stir with a fork until small beads appear. Add the topping to the filling. Bake for 35 min at 350º until the topping is golden brown. Let it rest for 15-20 min to allow the starches in the filling to gel.
