1 T oil
1 onion
1 red pepper
3 cloves garlic
3 c chicken broth
1 - 28 can each of black beans, corn and crushed tomatoes
1 lb chicken breast or boneless, skinless thighs
1 T oregano
2 tsp each cumin and paprika
1 tsp each garlic and onion powder
salt and pepper
1 tsp cayenne, optional

Topping options:
shredded cheddar, sour cream, lime wedges,
cilantro, avocado, corn chips, cooked rice

Directions:
Directions:
Fry up chopped onion, pepper and garlic. Add cubed chicken and fry til almost cooked. Add remaining ingredients and simmer slowly for 30-45 minutes.
Set out topping ingredients and let everyone add their favourite.
I like to add rice to this soup, so I brown 1 c in 1 T coconut oil, then add 2 c water. Cover and simmer 12 minutes, uncover, stir before serving.
